Need some comfort food on a cold day? You must try this Challenge Friendly version of Shepherd's Pie. Who said challengers can't indulge in an old classic favourite!? Add the veggies your family likes best and ENJOY!!
Ingredients:
1lb ground beef (or turkey)
1/2 medium onion, diced
1 tbsp. olive oil
1 tsp. garlic powder
1 tsp. oregano
1 tsp. salt
1 cup corn
1 cup green beans
2 cups tomato sauce
3 large sweet potatoes, peeled cubed.
1/2 cup goats mozzarella cheese
Directions:
1. Preheat oven to 350.
2. In a medium pot, boil sweet potatoes until soft.
3. While sweet potatoes are boiling, heat olive oil on medium heat in a large pan and sauté onions for 3-5 minutes.
Add ground beef (or turkey); brown and add, garlic powder, salt and oregano.
4. Add cooked corn, green beans and tomato sauce. Heat throughout. Spoon meat mixture into a casserole type dish.
5. Once potatoes are softened, drain all water and mash. Cover the meat mixture with the mashed sweet potatoes.
6. Sprinkle pie with goats mozzarella cheese and place in the oven for 10-15 minutes or until heated through.
TIP: This is also a great recipe to pre-make. Feel free to prep this dinner, cover and place in the fridge until you are ready to eat. Bake for 35 minutes to heat through if prepping.
