This weather reminds me of all my favorite crockpot recipes, and this one is at the top of my list. The sweet potatoes give this chili a bit of a sweet taste which is why I love it so much. It's perfect to freeze for lunch or dinners to enjoy over and over again.
Ingredients:
- 1 tbsp. olive oil
- 1 cup diced onion s
- 2 garlic cloves
- 1lbs extra-lean ground turkey
- 1 cup red bell pepper, seeded and diced
- 1/2 cup chopped celery
- 1 cup chopped carrots
- 2 cups sweet potatoes, peeled and diced
- 1 can diced tomatoes, undrained
- 1 can red kidney beans, drained and rinsed
- 1 cup tomato sauce
- 1/2 cup chicken broth
- 2 tsp. red pepper flakes
- 2 tsp. paprika
- 1/2 tsp. coriander
- salt and pepper to taste
- Chopped green onions for garnishing
- Plain Greek yogurt (optional topping)
Instructions:
1. Heat olive oil in a medium skillet over medium-high heat.
2. Add onions and sauté for 3 minutes, then add garlic and sauté for 1 minute.
3. Add extra-lean ground turkey and cook about five minutes. Set aside.
4. Add to a crockpot: celery, carrots, sweet potatoes, diced tomatoes, red kidney beans, tomato sauce, chicken broth, red pepper flakes, paprika, coriander, salt and pepper to taste.
5. Pour browned ground turkey, onions and garlic mixture into the crockpot.
6. Stir mixture well, cover with lid and simmer on low heat 5-6 hours
7. Top with green onions and plain greek yogurt (optional)
8. ENJOY!!
